FSIS Announces New Salmonella Prevention Guidelines

The organization announces new prevention guidelines for salmonella in market hogs

In December 2013, FSIS released new compliance guidelines aimed at reducing the amount of salmonella present in market hogs, according to FSIS. The document, titled “Compliance Guideline for Controlling Salmonella in Market Hogs” aims to reduce, prevent or eliminate the presence of salmonella at US hog slaughter facilities.

Due to several recent outbreaks of salmonella in pork, the agency decided to create the set of guidelines in hopes of reducing the number of outbreaks. The 42-page document makes a number of best practices suggestions for topics such as post-slaughter processing, heating and freezing, pre-harvest safety, using new technologies, evisceration practices, transportation practices and more.

FSIS is currently seeking public comment on the guidance, according to Food Safety News.  Visit regulations.gov to see the full document.
